Roasted Sunchokes

Sunchokes (or Jerusalem Artichokes) are delicious and a nice break from potatoes. They are one of the best sources of inulin which is a prebiotic that feeds, and helps to grow, your healthy gut bacteria. They are also a great source of iron (42% of DV), potassium, copper and thiamin.

Ingredients

  • Sunchokes washed and cubed

  • Refined coconut oil

  • Salt

Directions

  1. Preheat oven to 350 degrees.

  2. Mix cubed sunchokes with melted coconut oil and salt.

  3. Spread onto a baking sheet with parchment paper and bake until soft.
