Sanitas’ Best Chicken & Vegetable Soup

Ingredients

  • 1 whole chicken

  • 2 onions

  • 4 cloves of garlic

  • 2 celery stalks plus 2 more

  • 4 carrots

  • 1 zucchini

  • 1 potato

  • 1/2 bunch of kale finely chopped

  • 1/2 bunch of cilantro finely chopped

  • Salt and pepper

Directions

  1. Rinse chicken and cover with water in large pot.

  2. Add 2 celery stalks, 1 onion cut into 8 pieces, salt and pepper.

  3. Simmer for 1 hour to make broth.

  4. Remove chicken and strain out broth discarding onion and celery.

  5. Finely chop the other onion and garlic and add to broth. Cut potato and carrots into bite sized pieces and add to broth. Cut remaining celery and zucchini into bite sized pieces and add celery 10 minutes after adding carrots.

  6. Shred chicken and add back to soup. Adjust salt and pepper.

  7. Add finely chopped kale and cilantro in the last 5 minutes, when potatoes, carrots, etc are almost cooked through.
