Sanitas’ Best Paleo BLT

Ingredients

  • 1-2 Sweet Potatoes (the wider the potato, the larger the base)

  • 1/3 cup Homemade or Primal Kitchen Mayonnaise (available at Whole Foods)

  • 1-2 tsp Sriracha (optional and to taste)

  • 2 cups Arugula

  • 3-4 large Tomatoes sliced

  • 1-2 Avocados sliced

  • 1 lb Bacon cooked

Directions

  1. Cut the sweet potatoes width-wise into large circles.

  2. Boil in water for 3 minutes and then pan fry in coconut oil for a few minutes to crisp them up (flipping enough so that they don't blacken).

  3. Let them cool.

  4. Mix mayo and sriracha together and spread on each sweet potato circle.

  5. Layer on 1 tomato slice, cover with arugula, layer on avocado slice(s) and top with bacon.
