Paleo One-Pot Fish Delicious-ness!

Ingredients

  • 1lb of White fish (cod works well)

  • 1-2 Zucchinis

  • 1/2 - 1 pint of cherry tomatoes

  • 1 Lemon sliced + the juice from 1/2 of another lemon

  • 1 tsp Italian herb mix (thyme, oregano, garlic powder, etc.)

  • 2 Tbsp Olive oil

  • 1/2 bunch of cilantro finely chopped

  • Salt and pepper

Directions

  1. Preheat oven to 350.

  2. Make zucchini noodles with a spiral vegetable slicer (we like this one). If you don't have one, you can slice zucchini thinly or cut it into little strips like fries.

  3. Place the noodles in the bottom of a casserole dish or dutch oven (great deal on Amazon for 5-piece Iron set) and coat with some olive oil, herb mix, salt and pepper (reserve some for fish) and half of chopped cilantro.

  4. Place fish on top and layer on lemons and cherry tomatoes. Sprinkle salt, pepper and remaining herbs and cilantro.

  5. Cover and bake in oven for around 20 minutes (you want the fish to flake and the zucchini to be somewhat soft).
