Paleo Friendly Protein-Packed Frittata Recipe

  • 8-inch to 10-inch cast iron pan

  • Spatula

Ingredients

  • 1 T ghee or olive oil

  • 1/2 lb ground chicken

  • 1/2 t dried sage

  • 1 t dried basil

  • 1/2 t ground fennel

  • 1/2 t sea salt

  • 1/4 t black pepper

  • 2 cups chopped kale

  • 8 large eggs, beaten

  • 2 T sliced almonds

Directions

  1. Preheat oven to 400°F.

  2. Heat olive oil in skillet over medium heat.

  3. Add ground chicken and cook 2-3 minutes, breaking up meat with a spatula.

  4. Stir in sage, basil, fennel, sea salt and black pepper.

  5. Cook 3 minutes longer.

  6. Remove cast iron pan from heat and stir in kale.

  7. Let sit 2-3 minutes to wilt.

  8. Pour whisked eggs evenly over the top and scatter almond slices.

  9. Transfer to preheated oven. Cook 15-20 minutes, until eggs are set.

  10. Slice and serve hot.
