High Protein Apple Muffins for Breakfast & Snacks

Ingredients

  • 6 large apples (green or red), chopped into 1/2 inch pieces

  • 6 tablespoons warm water

  • 18 eggs

  • 3 tablespoons of coconut oil melted

  • 6 tablespoons coconut milk

  • 3 tablespoons coconut flour

  • 2 tablespoons cinnamon

  • 2 tablespoons cardamom

  • 1 tablespoons cloves

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • Coconut spray oil (optional, can use regular oil as well)

Directions

  1. Preheat oven to 350. 

  2. In a large nonstick pan, sautée the apples and water until the apples are the consistency of chunky applesauce or apple pie filling.

  3. Allow the mixture to cool before combining with the egg mixture.

  4. Whisk the eggs, coconut oil, coconut milk, coconut flour, cinnamon, cardamom, cloves, baking soda, and salt until well combined.

  5. Add the cooled apples.

  6. Spray or wipe the muffin tins generously with coconut oil.

  7. Bake for 40 minutes.

*These are easy but a bit time consuming, so I usually double or triple the recipe.

** When reheating, I cut them in half and warm them in the toaster oven and then add butter or unrefined coconut oil.
