Fried Eggs with Veggies

Ingredients

  • 2 teaspoons refined coconut oil

  • 2 pastured eggs

  • salt & pepper

  • handful of arugula or lettuce

  • cherry tomatoes

  • avocado

  • olive oil

  • Braggs apple cider vinegar

Directions

  1. Heat oil and add eggs and whole cherry tomatoes to pan.

  2. While those cook, pull out arugula. Put eggs and tomatoes on plate and dress everything with olive oil and vinegar.

  3. You can also add a half of an avocado with salt.
