Chocolate Chip Cookie Bars

Ingredients

  • 2 Cups of Flour

  • 1/2 Teaspoon Xanthan Gum (Only if using Gluten Free Flour)

  • 1 Teaspoon Baking Soda

  • 1 Teaspoon Salt

  • 2 Sticks of Butter (1 Cup)

  • 1 Cup of Brown Sugar

  • 1/2 Cup of Cane Sugar

  • 2 Teaspoon Pure Vanilla Extract

  • 2 Eggs

  • 1 Cup of Mini Semi Sweet Chips

  • 1 Cup of Semi Sweet Chips or Chocolate Chunks

  • Sea Salt Flakes (optional)

Directions

  1. Preheat oven to 350 degrees.

  2. Mix dry ingredients in a small mixing bowl, set aside.

  3. Melt butter in microwave or on stove top.

  4. Cream butter and both sugars together in a mixer until smooth - about 1-2 minutes on high. If you do not have a mixer available, cream in bowl by hand for 3-4 minutes.

  5. Add eggs and vanilla to mixing bowl and mix on low for 1 minute.

  6. Slowly combine the dry ingredients into the mixer, mixing at a low speed until consistency appears to be like cookie dough. Be careful not to over mix the flour.

  7. Slowly add in the two cups of baking chips until combined.

  8. Spray 9x13 baking pan with non stick baking spray or smear with butter.

  9. Spread cookie mix evenly in the pan.

  10. *Optional* Sprinkle sea salt flakes on the top of the mix.

  11. Bake for 25 minutes (adjusted for high altitude).

  12. Let cool and enjoy the cookie bars!

Notes: If making the bars gluten free, use King Arthur All Purpose Baking Flour. I've tried many flours and it has the best consistency for these bars. These bars are great a day or two after you make them and freeze very well. Make sure the bars are completely cooled off before storing/freezing.
