Roasted Sunchokes

These are delicious and a nice break from potatoes. Sunchokes (or Jerusaleum Artichokes) are one of the best sources of inulin which is a prebiotic that feeds, and helps to grow, your healthy gut bacteria. They are also a great source of iron (42% of DV), potassium, copper and thiamin.

  • Sunchokes washed and cubed
  • Refined coconut oil
  • Salt

Mix cubed sunchokes with melted coconut oil and salt. Spread onto a baking sheet with parchment paper and bake until soft at 350 in the oven.
