This is great on veggie chips made out of jicama, carrots, cucumbers, radishes, peppers, etc.
- 4 medium-large ripe but firm avocados
- 1 medium diced red onion
- 1 large diced tomato
- 1/2 bunch cilantro
- 2 garlic cloved minced or pressed
- Salt and pepper to taste
- 2 Tbsp pomegranate seeds
Squeeze avocados to soften them up before cutting. Cut avocados and scoop out pulp. Add onion, tomato and garlic and combine with avocado. Add cilantro, salt and pepper. Fold in pomegranate seeds.
