This ceviche recipe is so easy and provides a great balanced meal.
- 2 lbs shrimp
- 6 key limes
- 1 green pepper minced
- 1 cucumber peeled and chopped
- 1 medium onion minced
- 1 bunch of cilantro chopped
- 2 cloves of garlic minced
- 1 avocado cubed
- 1 cup quartered cherry tomatoes
Steam shrimp for 3 minutes, peel and devein. Marinate shrimp in lime juice for 10 min in mixing bowl, do not drain. Add green pepper, cucumber, onion, cilantro, and garlic to shrimp. Toss well.
