CrossFit Sanitas Paleo BLTs

Yum…BLTs! Need I say more. Here’s a recipe that’s very satisfying, get in lots of veggies and won’t lose you any points on the Clean Challenge.

Ingredients:

  • PRI-M-I-2T1-2 Sweet Potatoes (the wider the potato, the larger the base)
  • 1/3 cup Homemade or Primal Kitchen Mayonnaise (available at Whole Foods)
  • 1-2 tsp Sriracha (optional and to taste)
  • 2 cups Arugula
  • 3-4 large Tomatoes sliced
  • 1-2 Avocados sliced
  • 1 lb Bacon cooked

Cut the sweet potatoes width-wise into large circles. Boil in water for 3 minutes and then pan fry in coconut oil for a few minutes to crisp them up (flipping enough so that they don’t blacken). Let them cool.

 

Mix mayo and sriracha together and spread on each sweet potato circle. Layer on 1 tomato slice, cover with arugula, layer on avocado slice(s) and top with bacon. These are great for parties or for dinner.
