Coconut vs. Almond Flour?

One quick note on paleo baking…if you’re going to bake things that require flour, try to find recipes that use coconut vs. almond flour.  One cup of almond flour is equivalent to 90 almonds and almonds are high in PUFAs, or omega 6s (which cause inflammation when they’re out of balance with omega 3s). Also the PUFAs found in almonds are not stable at high temperatures and the fat becomes oxidized…which means the double bond is easily broken and they become free radicals in your system.
