This takes a couple of hours, but there’s nothing like chicken soup from scratch.
- 1 whole chicken
- 2 onions
- 4 cloves of garlic
- 7 celery stalks
- 6 carrots
- 2-3 zucchini
- 1 bunch of kale finely chopped
- 1/2 bunch of cilantro finely chopped
- Salt and pepper
Rinse chicken and cover with water in large pot. Add 2 celery stalks, 1 onion cut into 8 pieces, salt and pepper. Simmer for 1.5 hours to make broth. Remove chicken and strain out broth discarding onion and celery. Finely chop the other onion, garlic, and carrots and add to broth. Wait 10 minutes and add 5 celery stalks and 2-3 zucchinis chopped. Shred chicken and add back to soup. Adjust salt and pepper. Add finely chopped kale and cilantro in the last 5 minutes. This soup is great with this restaurant-style salsa from the blender. If you have kids, the smaller you chop the veggies and shred the chicken, the more likely they are to love it.
