To a lot of people this sounds kind of crazy, but it takes less than 5 minutes and my kids love it. It’s also an easy way to balance your meal so you have protein, carbs and fat.
1 tablespoon coconut oil
spices like cardamom, cinnamon, cloves, etc.
optional additions like blueberries, nuts, etc.
Melt coconut oil in small nonstick pan. Cut bananas lengthwise and then into small half circles and brown on medium heat for about 3 minutes. This makes the bananas sweeter with a better texture. Whisk spices of your choice into the two eggs until thoroughly combined and add to pan stirring until cooked through. Near the end add any additional toppings that sound good like blueberries, chopped walnuts, etc.
